Sheri's Tomato Salsa
In a medium size bowl add 2 chopped tomatoes, 1 each red and white diced onion, 1 each red and green pepper, 1 diced and chopped avocado. Mix. Add 1 cup frozen corn, 1 cup canned, drained black beans, 1 teaspoon crushed garlic, 1 teaspoon liquid honey. Add to taste - fresh cilantro (optional 1/4 chopped) 1 teaspoon cumin, 1 teaspoon chili powder, juice from 1 lime, salt & pepper. Refrigerate and enjoy!
Sheri's Pineapple Mango Salsa
In a medium bowl add 1 fresh pineapple, and mango, chopped, 1/2 diced red and white onion, 1/2 diced English Cucumber, 1 red and green pepper, diced, 1/2 cup fresh chopped mint. Add to taste - grated fresh ginger, liquid honey, salt and pepper. Moisten with a little orange juice, refrigerate and enjoy!
