garlic lemon potato dip

In a food processor (using an on/off motion) mix approximately 2 cups of leftover mashed potatoes, zest from one lemon, 1 teaspoon lemon juice, 1 teaspoon of chopped fresh garlic, or roasted garlic , 1 - 2 tablespoons of chopped fresh parsley or other herbs and salt and pepper, to taste. While the machine is running, gradually add 2 tablespoons of olive oil.

DO NOT OVERMIX, serve with raw vegetables, chips. pita, pretzels etc. Enjoy, Prost!
